Every year my husband and I celebrate St. Patrick's Day with another couple. The evening is hosted at our home and features a traditional corned beef dinner. For me, the cooking part is easy: a boiled dinner of corned beef, potatoes, cabbage, and carrots and homemade Irish soda bread. For the guys, the beverage is easy: Guinness. For my girlfriend and me, the drinks have proven to be more difficult. Neither of us like beer, and mint drinks can be overpowering.

Yes, Cinco de Mayo has come and gone. Here is a twist on an old favorite. Are you tired of not being able to savor your Irish Car Bomb because the Bailey’s curdles too quickly? I know I am, which is why I pick up a pint (get it?) of Guinness ice cream whenever I see it at Jake’s Ice Cream and Sweet Shoppe. Aside from the multitude of original flavors they create, they are the only place I’ve seen Guinness, Bailey’s or Kahlua flavored ice cream. Let’s keep it Irish, and go with Guinness for today.

Strawberry Margarita Fizz
Sugar for coating rims of glasses
1-1/2 cups softened strawberry ice cream
1/2 cup chopped strawberries, plus whole strawberries for garnish
1 ounce tequila, or to taste
1/2 teaspoon fresh lime juice
1/3 cup chilled club soda
Garnish: lime slices
