I love sparkling wine cocktails! This one looks simple, and satisfying -- perfect for spring and summer.

Fruit-based wine cocktails are another delicious seasonal treat. I particularly enjoy the following:

Fresh Berry Soup with White Wine

1 bottle white wine (I recommend a light, crisp style like Sauvignon Blanc or Pinot Gris)
2/3 cup white sugar
6 cups sliced berries (strawberries, blueberries, raspberries)
2 cups orange juice
1 cup cranberry juice
splash of fresh lemon juice

In a medium saucepan, mix together the bottle of wine and the sugar; let boil together for about five minutes. Remove from heat and let cool.

Add the fruit and fruit juices. Let everything sit together for at least an hour, refrigerated, to let the flavors blend.

Serve in martini or big wine glasses, with spoons.
